The Dietitian’s Meal Plan for the Week of January 17, 2022

Meal One

Olive Oil Baked Shrimp

This is our FAV shrimp recipe–we used to eat Richard’s Mother’s shrimp scampi that had 1 stick of butter in it–we now eat this and even like it better!!

Meal Two

Shakshuka

My vegetarian son has introduced me to some great recipes–he loves to cook!

Meal Three

Lazy Crock Pot Chicken with Mushrooms

My favorite recipe from my skinny slow cooker cookbook.

Meal Four

Chicken Italiano

My favorite recipe from my skinny slow cooker cookbook.

Meal Five

Minestrone

Three superfoods, zesty flavors, and crunch to boot—what else could you possibly want in a salad. The fact that it comes together in under 30 minutes is an added bonus.

Healthy Snack

All Bran Muffins

My secret weapon recipe when trying to lose weight and increase fiber. I add fresh blueberries and use whole wheat flour to make it even healthier. Thanks to two full cups of All-Bran® cereal per recipe, each of these yummy muffins offers 14% of your daily fiber requirement.
