The Dietitian’s Meal Plan for the Week of October 18, 2021

Meal One

Air Fryer Fried Chicken, Mashed Cauliflower, Broccoli


Meal Two

Meat Loaf Muffins, Green Beans, Roasted Red Potatoes

This recipe takes less time than traditional meatloaf since it is baked in muffin pans. You could also use ground turkey but if your family is like mine, they will prefer the beef version.


Meal Three

Slow Cooker Mediterranean Salmon, Whole Wheat Couscous

This salmon recipe is easy and delicious!


Meal Four

Spicy Veggie Hash with Sweet Potatoes, Peppers and Corn, Salad

You could also add a can of black beans or leftover chicken to add more protein to the meal.


Meal Five

Veggie Fried Rice with Ham, Fruit

If you don’t like bean sprouts, use extra red bell pepper or extra mushrooms. Some chopped pineapple would also be a good addition.
